Grilled Mango Chicken
Ingredients:
4 boneless, skinless chicken breasts
1 large ripe mango, peeled and diced
¼ cup olive oil
2 tablespoons lime juice
2 tablespoons honey
2 cloves garlic, minced
1 teaspoon chili powder
½ teaspoon cumin
Salt and pepper, to taste
Fresh cilantro, for garnish
Instructions:
Make the Marinade:
In a blender or food processor, blend the diced mango, olive oil, lime juice, honey, garlic, chili powder, cumin, salt, and pepper until smooth.
Marinate the Chicken:
Place the chicken breasts in a resealable plastic bag or shallow dish.
Pour the mango marinade over the chicken, turning to coat evenly.
Seal or cover and refrigerate for at least 1 hour, preferably 4 hours for deeper flavor.
Grill the Chicken:
Preheat your grill to medium-high heat.
Remove the chicken from the marinade (discard any remaining marinade).
Grill for 6–8 minutes per side, or until the internal temperature reaches 165°F (74°C) and the chicken is beautifully charred.
Garnish and Serve:
Let the chicken rest for a few minutes after grilling.
Garnish with fresh cilantro and serve warm.
Notes:
Add a chopped jalapeño to the marinade if you like a little heat.
This dish pairs beautifully with grilled vegetables, a light salad, or coconut rice.
You can substitute mango with pineapple or peach for a different fruity twist.
For oven baking, cook at 375°F for 25–30 minutes until fully cooked through.
