Creamy Grilled Chicken with Rice & Spiced Sauce 🍗🍛

🛒 Ingredients:
For the chicken:
4 chicken breasts 🍗
1 tbsp olive oil 🛢
1 tsp paprika 🌶
½ tsp garlic powder 🧄
Salt & black pepper to taste 🧂
For the sauce:
1 tbsp butter 🧈
2 garlic cloves, minced 🧄
100g sun-dried tomatoes, chopped 🍅
200ml heavy cream 🥛
50g grated parmesan 🧀
1 tsp Dijon mustard (optional)
Handful of chopped fresh parsley 🌿
For the rice:
200g basmati or jasmine rice 🍚
Salted water to cook 🧂
👩🍳 Instructions:
Cook the rice in salted water as per package instructions. Rub chicken breasts with olive oil, paprika, garlic powder, salt, and pepper. Grill or pan-fry on medium-high heat for about 6–7 minutes per side until cooked through and nicely charred. In a separate pan, melt butter, sauté garlic for 1 minute, then add sun-dried tomatoes. Stir in cream, parmesan, and mustard if using. Simmer gently until the sauce thickens. Return the chicken to the pan, coat with sauce, and simmer 2–3 minutes more. Serve over rice and sprinkle with fresh parsley.
