Instructions
Prepare the Grilled Salmon
Marinate Salmon: In a bowl, whisk together olive oil, minced garlic, parsley, dill, lemon juice, salt, and pepper. Place the salmon fillets in the marinade, turning to coat. Let marinate for about 10 minutes.
Preheat Grill: Preheat your grill or grill pan over medium-high heat.
Grill Salmon: Remove the salmon from the marinade and place it on the grill, skin-side down. Grill for about 4-5 minutes on each side, or until cooked through and flaky.
Make the Avocado Tomato Salad
Combine Salad Ingredients: In a large bowl, combine diced avocados, cherry tomatoes, chopped red onion, lime juice, salt, and pepper. Gently toss to combine, being careful not to mash the avocados.
Prepare the Rice
Heat Rice: If using leftover rice, heat it in a saucepan with butter (if desired) and a pinch of salt until warmed through.
Serve
Plate: Serve the grilled salmon with a generous portion of avocado tomato salad and a side of rice. Garnish with fresh cilantro.
Tips and Variations
Add Spice: For a kick, sprinkle some red pepper flakes over the salad.
