π For the Chicken:
2 chicken breasts, sliced
1 tbsp olive oil π«
1 tsp paprika
Β½ tsp garlic powder
Salt & pepper to taste π§
Juice of Β½ lime (optional)
π For the Sweet Potato Fries:
2 medium sweet potatoes, cut into fries
1 tbsp olive oil π«
Salt, pepper, paprika, and garlic powder
π₯ For the Avocado Salsa:
1 avocado, diced π₯
10 cherry tomatoes, halved π
2 tbsp red onion, chopped π§
1 tbsp cilantro or parsley, chopped πΏ
Juice of Β½ lime π
Salt & pepper
πΏ For the Herb Aioli:
3 tbsp mayonnaise
1 garlic clove, minced
1 tsp lemon juice
1 tbsp fresh herbs (parsley, chives, etc.), chopped
π¨βπ³ Instructions:
Preheat oven to 200Β°C (400Β°F). Toss sweet potato fries with olive oil and seasoning, spread on a baking tray, and roast for 20β25 minutes until crisp. Meanwhile, season chicken and grill or pan-fry for 5β6 minutes per side until cooked through. For the salsa, combine all ingredients in a bowl and mix gently. Stir together all aioli ingredients in a small bowl. Assemble everything in a large bowl: sweet potato fries, grilled chicken, avocado salsa, and a spoonful of herb aioli. Serve warm and fresh!
