🔥 SEARED AHI TUNA SALAD WITH CITRUS AND GOAT CHEESE 🔥

INGREDIENTS:
• 1 lb sushi-grade ahi tuna
• 2 tbsp sesame oil
• Salt and pepper to taste
• 4 cups baby spinach
• 2 oranges, segmented
• 1 fennel bulb, thinly sliced
• 1 cucumber, ribboned with vegetable peeler
• 1/3 cup pomegranate seeds
• 2 oz goat cheese, crumbled
• 1 cup microgreens
• 2 tbsp sesame seeds (optional)

DRESSING:
• 3 tbsp olive oil
• 1 tbsp rice vinegar
• 1 tbsp honey
• Juice of 1 lemon
• Salt and pepper to taste

INSTRUCTIONS:
1. Pat tuna dry with paper towels and season with salt and pepper.
2. Heat sesame oil in a skillet over high heat until smoking.
3. Sear tuna for 45 seconds per side for rare (or longer if preferred).
4. Remove, let rest 5 minutes, then slice thinly.
