Quick High-Protein Vegan Meal: Dreamy Pesto Butter Beans 💪

Ingredients:
1 tablespoon (15ml) Olive Oil
2 cloves Garlic, minced
1 can (15 oz / 425g) Butter Beans (or Cannellini Beans), rinsed and drained
1/4 cup (60g) Vegan Pesto (store-bought or homemade)
2 tablespoons (30ml) Vegetable Broth or Water
1 tablespoon (15g) Nutritional Yeast (optional, for cheesy flavor)
Juice of 1/2 Lemon
Salt and Black Pepper to taste
Optional: Pinch of Red Pepper Flakes, handful of Baby Spinach, Cherry Tomatoes halved

Directions:
1. Sauté Garlic: Heat olive oil in a skillet or saucepan over medium heat. Add minced garlic and cook for about 1 minute until fragrant, being careful not to burn it.
2. Add Beans and Pesto: Add the rinsed and drained butter beans to the skillet. Stir in the vegan pesto, vegetable broth/water, and nutritional yeast (if using).
3. Simmer Gently: Stir everything together gently to coat the beans. Bring to a gentle simmer and cook for 3-5 minutes, allowing the beans to warm through and the sauce to thicken slightly. If adding spinach, stir it in during the last minute until wilted. If adding tomatoes, stir them in now.
4. Finish with Lemon and Seasoning: Remove from heat. Stir in the fresh lemon juice. Add a pinch of red pepper flakes if desired. Season with salt and black pepper to taste.
5. Serve: Serve warm as a main dish with crusty bread, over pasta or rice, or as a hearty side dish.
