Ingredients:
250g wide rice noodles (or fettuccine)
300g ground Italian sausage or ground beef
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 medium red onion, sliced
3 cloves garlic, minced
1/2 tsp red pepper flakes (optional)
1 tsp Italian seasoning
1/2 cup dry white wine (or low-sodium chicken broth)
1 tbsp tomato paste
2 tbsp olive oil
Salt and pepper to taste
Fresh basil or parsley for garnish
Grated Parmesan (optional)
Directions:
Cook rice noodles according to package instructions. Drain and set aside.
In a large skillet, heat olive oil over medium heat. Add ground sausage or beef and cook until browned. Remove and set aside.
In the same skillet, sauté onions and bell peppers for 4–5 minutes until softened. Add garlic, red pepper flakes, and Italian seasoning.
Stir in tomato paste, then deglaze with white wine or broth. Let it simmer for 2–3 minutes.
Return the cooked meat to the pan. Add cooked noodles and toss everything together. Adjust salt and pepper.
Serve hot, garnished with chopped basil or parsley and a sprinkle of Parmesan if desired.
