Bourbon Chicken with Broccoli 🍗🥦
Ingredients:
1 lb chicken thighs (cut into bite-sized pieces)
2 cups broccoli florets
2 tbsp olive oil
1/4 cup soy sauce
1/4 cup apple juice (substitute for bourbon)
1/4 cup brown sugar
2 tbsp ketchup
2 tbsp apple cider vinegar
1 tsp garlic (minced)
1/4 tsp ground ginger
1/4 tsp red pepper flakes (optional)
Instructions:
Heat olive oil in a pan over medium heat. Add chicken pieces and cook until browned on all sides.
In a small bowl, whisk together soy sauce, apple juice, brown sugar, ketchup, vinegar, garlic, ginger, and red pepper flakes.
Pour the sauce into the pan with the chicken and simmer for 8-10 minutes until thickened.
While the chicken cooks, steam or sauté broccoli until tender.
Toss the broccoli with the chicken and sauce, and serve hot over rice.
Notes:
Add extra veggies like carrots or bell peppers for more variety.
For a bit of sweetness, drizzle some honey over the chicken.
