2¼ cups all-purpose flour

For the Filling:

8–10 full-sized Reese’s Peanut Butter Cups (not mini), unwrapped
Optional: 2 tbsp smooth peanut butter (for extra gooeyness)
For the Topping:

½ cup semi-sweet chocolate chips
1 tbsp coconut oil or vegetable shortening (for smooth melting)
¼ cup chopped Reese’s Peanut Butter Cups (for garnish)
Instructions:

Prep & Preheat:
Line two baking sheets with parchment paper. Preheat oven to 350°F (175°C).
Make the Cookie Dough:
In a large bowl, beat together softened butter, peanut butter, granulated sugar, and brown sugar until creamy (about 3 minutes). Add egg and vanilla; mix well. In a separate bowl, whisk flour, baking powder, and salt. Gradually fold dry ingredients into wet mixture until just combined. Chill dough 15 minutes for easier handling.
Assemble the Cookies:
Scoop 2 tablespoons of dough per cookie. Roll into balls and flatten slightly on prepared sheets. Use your thumb to press a small indentation in the center of each. Place one Reese’s cup (or half if using minis) into each well. For extra richness, add a small dollop (½ tsp) of peanut butter over the cup before sealing.
Seal & Bake:
Take another tablespoon of dough, roll into a flat disc, and gently press it over the top of the Reese’s cup to enclose it completely. Pinch edges to seal. Repeat for all cookies. Bake 12–14 minutes, until edges are golden but centers still look soft. They’ll firm up as they cool.
Melt the Chocolate Topping:
While cookies cool, combine chocolate chips and coconut oil in a microwave-safe bowl. Microwave in 20-second bursts, stirring between each, until smooth and glossy (about 60–90 seconds total).
Glaze & Garnish:
Once cookies are cooled, drizzle warm chocolate generously over each. Immediately sprinkle with chopped Reese’s pieces while chocolate is still wet so they stick. Let set 10–15 minutes before serving.
