Easy Chicken Curry Recipe
Ingredients:

1 tablespoon olive oil
1 medium onion, chopped
2 cloves garlic, minced
1 tablespoon fresh ginger, minced
1 tablespoon curry powder
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon turmeric
1/2 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1 pound boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
1 cup diced tomatoes (canned or fresh)
1 cup coconut milk
1/2 cup chicken broth
1 cup frozen peas (optional)
Fresh cilantro for garnish (optional)
Cooked rice or naan for serving
Instructions:

Heat Oil: In a large skillet or saucepan, heat the olive oil over medium heat.

Sauté Aromatics: Add the chopped onion and cook until translucent, about 5 minutes. Stir in the garlic and ginger, cooking for an additional 1-2 minutes until fragrant.

Add Spices: Stir in the curry powder, cumin, coriander, turmeric, paprika, salt, and black pepper. Cook for about 1 minute to toast the spices.

Cook Chicken: Add the chicken pieces to the pan and cook until browned on all sides, about 5-7 minutes.

Add Liquids: Pour in the diced tomatoes, coconut milk, and chicken broth. Stir well to combine and bring to a simmer.

Simmer: Reduce the heat to low and let the curry simmer for 15-20 minutes, or until the chicken is fully cooked and the sauce has thickened slightly. If using peas, add them during the last 5 minutes of cooking.

Serve: Garnish with fresh cilantro if desired and serve the curry over cooked rice or with naan bread.
