Homemade Peanut Butter Sandwich Cookies. A delicious treat for the entire family to enjoy!
Ingredients:
For the cookie dough:
1 cup unsalted butter, softened
1 cup peanut butter (smooth or chunky)
1 cup sugar
1 cup brown sugar, packed
2 large eggs
2 teaspoons vanilla extract
2 ½ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
For the peanut butter filling:
½ cup peanut butter (smooth)
1 cup powdered sugar
2 tablespoons unsalted butter, softened
1 teaspoon vanilla extract
Instructions:
1. Preheat the Oven:
Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper or silicone mats.
2. Make the Cookie Dough:
In a large bowl, cream together the softened butter and peanut butter using a hand mixer or stand mixer.
Add the sugar and brown sugar and continue to beat until light and fluffy.
Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the peanut butter mixture, mixing until combined.
3. Shape and Bake the Cookies:
Scoop tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheets, spacing them about 2 inches apart.
Press each ball down gently with a fork, creating a crisscross pattern.
Bake in the preheated oven for 10-12 minutes or until the edges are golden brown. Remove the cookies from the oven and let them cool on the sheets for a few minutes before transferring them to a wire rack to cool completely.
4. Make the Peanut Butter Filling:
In a small bowl, combine the smooth peanut butter, powdered sugar, softened butter, and vanilla extract.
Mix until smooth and creamy.
5. Assemble the Sandwich Cookies:
Once the cookies are completely cool, take one cookie and spread a generous amount of peanut butter filling on the flat side.
Top with another cookie to create a sandwich.
Repeat for the remaining cookies.
6. Serve and Enjoy:
