Pineapple Chicken and Rice

Ingredients:

2 tablespoons olive oil
1 pound boneless, skinless chicken breast, cubed
Salt and pepper to taste
1 red bell pepper, chopped
1 green bell pepper, chopped
1 small onion, diced
2 cloves garlic, minced
1 cup pineapple chunks (fresh or canned, drained)
1/4 cup soy sauce
2 tablespoons honey
1 tablespoon rice vinegar
1 teaspoon sesame oil
2 cups cooked white rice
2 tablespoons green onions, chopped (optional)
1 teaspoon sesame seeds (optional)
Directions:

Heat olive oil in a large skillet over medium heat.
Season cubed chicken with salt and pepper. Add to the skillet and cook until browned and cooked through, about 5–7 minutes. Remove and set aside.
In the same skillet, add bell peppers and onion. Sauté for 3–4 minutes until slightly softened.
Add garlic and cook for 1 more minute until fragrant.
Stir in pineapple chunks and return the chicken to the skillet.
In a small bowl, mix soy sauce, honey, rice vinegar, and sesame oil. Pour over the chicken and veggies.
Simmer for 3–4 minutes until everything is heated through and coated in the sauce.
Serve over warm cooked rice and garnish with green onions and sesame seeds if desired.
