Ingredients:
1 bag (12 oz / 340g) Broccoli Slaw Mix (shredded broccoli, carrots, red cabbage) OR 4 cups shredded broccoli stems, 1 cup shredded carrots, 1 cup shredded red cabbage
1/2 cup / 70g Sliced Almonds or Sunflower Seeds (toasted optional)
3 Scallions, thinly sliced
For the Sesame Ginger Dressing:
1/4 cup / 60ml Rice Vinegar
3 tbsp / 45ml Soy Sauce (use Tamari for Gluten-Free)
2 tbsp / 30ml Toasted Sesame Oil
1 tbsp / 15ml Honey or Maple Syrup
1 tbsp / 15g Grated Fresh Ginger
1 clove Garlic, minced
Directions:
1. If not using a pre-made mix, shred the broccoli stems (using a food processor or grater), carrots, and red cabbage.
2. In a large bowl, combine the broccoli slaw mix (or your homemade mix), sliced almonds or sunflower seeds, and thinly sliced scallions.
3. Prepare the dressing: In a small bowl or jar, whisk together the rice vinegar, soy sauce, sesame oil, honey (or maple syrup), grated ginger, and minced garlic until well combined.
4. Pour the dressing over the slaw ingredients.
5. Toss well to ensure everything is evenly coated.
6. For best results, let the slaw sit for at least 10-15 minutes before serving to allow the flavors to meld and the broccoli to soften slightly. Toss again before serving.
