1 lb (450g) salmon fillets, cut into bite-sized pieces π

1 tbsp honey π―
1 tsp sesame oil (optional) π₯

For the Jasmine Coconut Rice:
1 cup jasmine rice π
1 cup coconut milk π₯₯
1 cup water π§
Pinch of salt π§
For the Mango Cucumber Salad:
1 ripe mango, diced π₯
1/2 cucumber, thinly sliced π₯
1/4 cup red onion, finely chopped π§
1/4 cup cilantro, chopped πΏ
1 tbsp lime juice π
Salt and pepper to taste π§
For the Chilli Mayo Sauce:
1/4 cup mayonnaise π₯
1-2 tsp sriracha or chili sauce πΆοΈ (adjust to taste)
1 tsp lime juice π

π§βπ³ How to Make Salmon Bites with Jasmine Coconut Rice & Mango Cucumber Salad Bowl with Chilli Mayo Sauce:
Step 1: Prepare the Jasmine Coconut Rice:
Rinse the jasmine rice under cold water until the water runs clear.
In a saucepan, combine the coconut milk, water, and a pinch of salt. Bring to a boil.
Add the jasmine rice, reduce the heat to low, cover, and simmer for 15-20 minutes until the rice is tender and the liquid is absorbed.
Fluff the rice with a fork and set aside.
Step 2: Make the Mango Cucumber Salad:
In a medium bowl, combine the diced mango, cucumber, red onion, cilantro, and lime juice.
Season with salt and pepper to taste. Toss well and set aside in the fridge while you prepare the salmon.
Step 3: Cook the Salmon Bites:
In a small bowl, whisk together soy sauce, honey, sesame oil (optional), and minced garlic.
Heat olive oil in a large skillet over medium-high heat.
Add the salmon bites and cook for 2-3 minutes per side until golden and crispy.
Pour the soy sauce mixture over the salmon bites and cook for an additional 1-2 minutes, tossing to coat the salmon evenly.
Step 4: Make the Chilli Mayo Sauce:
In a small bowl, whisk together mayonnaise, sriracha or chili sauce, lime juice, and a pinch of salt until smooth and creamy.
Taste and adjust the spice level by adding more sriracha if desired.
Step 5: Assemble the Bowl:
Spoon the jasmine coconut rice into bowls as the base.
Top with the crispy salmon bites.
Add a generous serving of mango cucumber salad on the side.
Drizzle the chilli mayo sauce over the salmon or serve it on the side for dipping.
