Peanut Butter Brownie Bombs
Ingredients:
1 box brownie mix (plus ingredients to prepare it)
1 cup creamy peanut butter
1/2 cup powdered sugar
2 cups semi-sweet chocolate chips (for coating)
2 tablespoons coconut oil or shortening
Optional toppings: melted peanut butter for drizzle, chocolate shavings, sea salt
Directions:
Prepare brownies according to the package instructions and let them cool completely.
In a bowl, mix peanut butter and powdered sugar until smooth. Roll into small balls and freeze for 15–20 minutes.
Crumble cooled brownies into a large bowl and mash until dense and moldable. Scoop out some brownie mixture, flatten it, and wrap around a chilled peanut butter ball. Roll into a smooth ball and place on a tray.
Freeze the brownie bombs for 30 minutes until firm.
Melt chocolate chips with coconut oil in the microwave in 30-second intervals, stirring until smooth.
Dip each brownie bomb into the melted chocolate, let excess drip off, and place on a parchment-lined tray.
Drizzle with melted peanut butter and top with chocolate shavings or a sprinkle of sea salt if desired.
Chill until set, then enjoy!
