My version of Filipino Style Chicken Tocino
Ingredients:
2 pounds chicken
1/2 cup pineapple juice
2 tablespoons soy sauce
2 tablespoons vinegar
1/2 tsp salt
1/2 cup brown sugar
3 cloves grated garlic
1 teaspoon black pepper
1 teaspoon paprika
1/4 teaspoon red food coloring (optional)
Cooking oil, for frying
Steps:
In a bowl, combine pineapple juice, vinegar, salt, soy sauce, brown sugar, garlic powder, paprika, black pepper. Mix well until the sugar is dissolved.
Add the chicken to the marinade. Cover the bowl and refrigerate for at least 6 hours, or overnight for full flavor.
After marinating, heat a frying pan over medium heat. Add cooking oil.
Fry the marinated chicken slices in batches until they are caramelized and cooked through, about 5 minutes per side.
Transfer the cooked chicken tocino to a serving plate lined with paper towels to drain excess oil.
Serve hot with rice and your favorite side dishes. Enjoy!
