Grilled Salmon with Mango Salsa & Coconut Rice
A delicious and healthy meal that's perfect for a weeknight dinner or a special occasion.
Ingredients:
For the Salmon:
4 (6 oz) salmon fillets
Olive oil
Salt and pepper
1/2 teaspoon paprika
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
For the Mango Salsa:
1 ripe mango, diced
1/2 red onion, finely chopped
1/4 cup fresh cilantro, chopped
1 lime, juiced
1/2 teaspoon chili powder
Salt and pepper to taste
For the Coconut Rice:
1 cup jasmine rice
1 1/2 cups coconut milk
1 1/2 cups coconut water
1/2 teaspoon salt
Instructions:
1. Prepare the Salmon:
Drizzle salmon fillets with olive oil and season with salt, pepper, paprika, garlic powder, and onion powder.
2. Grill the Salmon:
Preheat grill to medium-high heat. Grill salmon for 4-6 minutes per side, or until cooked through.
3. Make the Mango Salsa:
In a bowl, combine mango, red onion, cilantro, lime juice, chili powder, salt, and pepper. Mix well.
4. Cook the Coconut Rice:
In a saucepan, combine rice, coconut milk, coconut water, and salt. Bring to a boil, then reduce heat and simmer, covered, for 20-25 minutes, or until liquid is absorbed. Fluff with a fork.
5. Serve:
Serve grilled salmon over coconut rice, topped with mango salsa.
Tips:
For a spicier salsa, add a jalapeƱo pepper to the mix.
You can use other types of rice, such as brown rice or basmati rice.
