Rainbow Veggie Sushi Rolls with Quinoa: A Vibrant & Plant-Based Sushi Experience! π£π
Ingredients:
- 1 cup (180g) cooked quinoa | 180 grams cooked quinoa
- ΒΌ cup (30ml) rice vinegar | 30 milliliters rice vinegar
- 1 tablespoon maple syrup or agave | 15 milliliters maple syrup or agave
- Β½ teaspoon salt | 2.5 grams salt
- 4-5 sheets nori seaweed, sushi nori | 4-5 sheets nori seaweed, sushi nori
- Fillings:
- 1 cup (100g) julienned carrots | 100 grams julienned carrots
- 1 cup (100g) julienned cucumber | 100 grams julienned cucumber
- 1 cup (100g) avocado, sliced | 100 grams avocado, sliced
- Β½ cup (50g) red bell pepper, thinly sliced | 50 grams red bell pepper, thinly sliced
- Β½ cup (50g) sprouts (alfalfa, radish, or broccoli) | 50 grams sprouts
- Optional:

Directions:
1. Prepare Quinoa Sushi Rice: In a bowl, combine cooked quinoa, rice vinegar, maple syrup (or agave), and salt. Gently mix to combine. Set aside to cool slightly.
2. Prepare Veggies: Julienne carrots and cucumber. Slice avocado and red bell pepper. Have sprouts ready.
3. Assemble Sushi Rolls: Place a sheet of nori seaweed on a bamboo sushi rolling mat (or a clean, flat surface).
4. Spread a thin, even layer of quinoa mixture over the nori sheet, leaving about 1 inch of space at the top edge of the nori.
5. Arrange your desired fillings (carrots, cucumber, avocado, red bell pepper, sprouts) in a line across the center of the quinoa layer.
6. Using the bamboo mat, tightly roll up the nori sheet from the bottom edge, pressing firmly as you roll. Moisten the top edge of the nori with a little water to seal the roll.
7. Slice the sushi roll into 6-8 pieces using a sharp, wet knife.
8. Repeat steps 3-7 with the remaining nori sheets, quinoa mixture, and fillings.
9. Serve rainbow veggie sushi rolls immediately with vegan mayonnaise, soy sauce (or tamari), pickled ginger, and wasabi, if desired.
