Cuban Mojo Pork
Ingredients:
4 lbs pork shoulder
1 bunch fresh cilantro 🌿
10 cloves garlic (minced) 🧄
1 tbsp dried oregano 🌿
1/2 cup fresh lime juice 🍋
1 tsp black pepper 🧂
1 tbsp salt 🧂
1/4 cup olive oil 🫒
2 tsp ground cumin 🌱
1 cup fresh orange juice 🍊
Instructions:
Prepare the Marinade:
In a blender, combine garlic, cilantro, lime juice, orange juice, olive oil, cumin, oregano, salt, and black pepper. Blend until smooth.
Marinate the Pork:
Coat the pork with the marinade and refrigerate for at least 4 hours.
Preheat the Oven:
Preheat your oven to 300°F (150°C).
Roast the Pork:
Roast the pork in a pan for 4 hours, covering with foil until tender.
Shred the Pork:
Let the pork rest and then shred it into pieces.
Serve:
Serve with rice, black beans, or plantains, and garnish with cilantro.
