Ingredients:
- 2 packs (3 oz each) instant ramen noodles (discard the seasoning)
- 2 cups shredded green cabbage
- 1 cup shredded purple cabbage
- 1/2 cup shredded carrots
- 1/2 cup sliced green onions
- 1/2 cup sliced almonds
- 1/4 cup sesame seeds
- 1/2 cup thawed frozen peas
- 1/4 cup chopped cilantro (optional)
For the Dressing:
- 1/4 cup olive oil
- 3 tbsp rice vinegar
- 2 tbsp honey or maple syrup
- 1 tbsp soy sauce
- 1 tsp sesame oil
- 1/2 tsp garlic powder
- 1/2 tsp ginger powder
Instructions:
1️⃣ Toast the Noodles & Nuts:
Break the ramen noodles into smaller pieces. In a dry skillet over medium heat, toast the noodles, almonds, and sesame seeds for 2-3 minutes until they are golden. Set aside.

In a large bowl, combine the green & purple cabbage, carrots, peas, green onions, and cilantro.
