🛒 Ingredients:
For the Grilled Chicken:
2 large chicken breasts
2 tbsp soy sauce
1 tbsp olive oil
1 tbsp lemon juice
1 tsp honey
1 tsp garlic powder
½ tsp black pepper
For the Rice & Vegetables:
1 ½ cups jasmine rice
3 cups water
1 tsp salt
1 cup broccoli florets
½ cucumber, sliced
For Garnish:
Sesame seeds (optional)
Extra lemon wedges
👨🍳 Instructions:
1️⃣ Marinate the Chicken: In a bowl, mix soy sauce, olive oil, lemon juice, honey, garlic powder, and black pepper. Coat the chicken and marinate for at least 15 minutes.
2️⃣ Cook the Rice: Rinse jasmine rice under cold water. In a pot, bring water to a boil, add rice and salt, then reduce heat and simmer for 15 minutes until water is absorbed.
3️⃣ Grill the Chicken: Heat a grill pan over medium heat and cook the chicken for about 5-7 minutes per side until fully cooked. Let it rest for 5 minutes before slicing.
4️⃣ Steam the Broccoli: While the chicken cooks, steam the broccoli for 3-4 minutes until tender but still vibrant green.
5️⃣ Assemble the Bowl: Serve the grilled chicken with rice, steamed broccoli, and sliced cucumber. Garnish with sesame seeds and a squeeze of lemon if desired.
