For the Sauce:
1 tbsp olive oil 🫒
1 small onion, diced 🧅
2 garlic cloves, minced 🧄
1 green bell pepper, diced 🫑
1 jalapeño, sliced 🌶
3 tbsp soy sauce 🥢
1 tbsp honey 🍯
1 tsp lime juice 🍋
½ tsp red pepper flakes (optional) 🔥
100ml (½ cup) chicken broth 🍲
For Serving:
200g (1 cup) cooked rice 🍚
1 lime, cut into wedges 🍋
Fresh cilantro leaves 🌿
Instructions
Cook the Chicken: Season the chicken with salt, pepper, garlic powder, and paprika. Heat olive oil in a pan and cook the chicken for 5-7 minutes until golden brown. Remove and set aside.
Sauté the Vegetables: In the same pan, sauté onions, garlic, bell pepper, and jalapeños until slightly softened.
Make the Sauce: Stir in soy sauce, honey, lime juice, red pepper flakes, and chicken broth. Let it simmer for 5 minutes.
Combine Everything: Return the chicken to the pan, mix well, and cook for another 5 minutes until everything is coated in the sauce.
Serve & Enjoy! Plate with rice, garnish with fresh cilantro, and serve with lime wedges.
