Honey Lime Coconut Curry Chicken
This Honey Lime Coconut Curry Chicken combines the perfect balance of flavors, offering a satisfying blend of coconut, lime, curry, and honey. Chicken:
1/4 cup oil
Zest and juice of 2 limes
2 teaspoons ground cumin
1/4 cup low-sodium soy sauce
2 teaspoons salt
1/4 cup honey
4 teaspoons curry powder
1 cup canned coconut milk (light or regular)
2.5–3 pounds chicken breasts
1/2 cup chopped fresh cilantro
Directions:
1. In a large bowl or Ziploc bag, whisk together oil, lime zest, lime juice, cumin, soy sauce, salt, honey, curry powder, and coconut milk. Add chicken and marinate for at least 1 hour, or up to 24 hours.
2. Remove chicken from the marinade and pour the marinade into a saucepan. Bring to a boil over medium-high heat, then reduce heat and simmer for 10 minutes.
3. Grill or bake chicken at 375°F until fully cooked.
4. Garnish with chopped cilantro and drizzle with the cooked marinade.
