I can't get enough of this butter tofu curry 🤤💚🌱
**Recipe**
Ingredients:
3 T vegan butter
1 bulb minced garlic
2 inch fresh grated ginger root
2 t garam masala
1 t ground cumin
1 t smoked paprika
1 t ground turmeric
½ t chili powder optional
1 t salt
1 block of extra or super firm tofu, pressed, cut into cubes, coated with olive oil and baked in oven on 450° for 10-15 minutes
1 can of tomato sauce
1 can of full fat coconut milk
1-2 T maple syrup
Melt butter in pan. Saute garlic and ginger. Add all the spices in and stir. Deglaze pan by adding about ½ cup of water. Add in tomato sauce and tofu cubes. Combine well, cover, and simmer for about 20 minutes. When finished, stir in maple syrup and coconut milk and let warm up for a couple of minutes. Serve with rice. Enjoy
