Garlic Ginger Bok Choy Stir-Fry
Ingredients:
2 tablespoons vegetable oil
4 cloves garlic, minced
1 tablespoon fresh ginger, minced
1 pound bok choy, chopped (about 4 cups)
1 red bell pepper, sliced
1 carrot, julienned
3 tablespoons soy sauce
1 tablespoon rice vinegar
1 teaspoon sesame oil
1 teaspoon cornstarch mixed with 1 tablespoon water (optional for thickening)
Salt and pepper to taste
Sesame seeds for garnish (optional)
1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
2. Add the minced garlic and ginger, stirring quickly for about 30 seconds until fragrant.
3. Add the chopped bok choy, sliced red bell pepper, and julienned carrot to the skillet. Stir-fry for 3-4 minutes until the vegetables are tender but still crisp.
4. Pour in the soy sauce, rice vinegar, and sesame oil. Stir to combine all the ingredients.
5. If you prefer a thicker sauce, add the cornstarch mixture and stir until the sauce thickens, about 1 minute.
6. Season with salt and pepper to taste.
7. Remove from heat and garnish with sesame seeds if desired. Serve immediately.
