This classic quiche is light, savoury, and perfect for lunch or as part of a picnic spread. A crisp pastry base is filled with creamy cheese, sweet onions, and a rich egg custard. Letโs get baking!
Ingredients:
For the Pastry:

๐ง Unsalted butter: 125g, chilled and cubed

๐ง Cold water: 2โ3 tbsp
For the Filling:

Onion: 1 large, finely chopped

๐ง Cheddar cheese: 150g, grated
๐ฅ Eggs: 4 large
๐ฅ Double cream: 300ml
๐ฟ Fresh chives (optional): 1 tbsp, finely chopped

๐ถ๏ธ Black pepper: To taste
๐ฑ Spring onions (optional garnish): 1, sliced thinly
Method:
1. Prepare the Pastry:
๐ฅฎ In a bowl, rub the butter into the plain flour and salt until it resembles fine breadcrumbs.
๐ง Add the cold water, a little at a time, and mix until the dough comes together.
๐ฅ Roll the dough into a ball, wrap in cling film, and chill in the fridge for 30 minutes.
2. Blind-Bake the Pastry:

๐ฅง Roll out the chilled pastry on a lightly floured surface and line a 23cm tart tin. Trim the edges.
๐งป Line the pastry with baking paper and fill with baking beans or dried rice. Blind bake for 15 minutes, then remove the beans and bake for another 5 minutes until golden. Set aside.
3. Cook the Onions:

Melt the butter in a frying pan over medium heat. Add the chopped onion and cook gently until softened and slightly golden. Set aside to cool.
4. Prepare the Filling:
๐ฅ In a large bowl, whisk the eggs and cream together until smooth. Season with salt and black pepper.
๐ง Stir in the grated cheddar, cooked onions, and chives (if using).
5. Assemble and Bake:
๐ฅง Pour the filling into the prepared pastry case. Smooth the top and sprinkle with a little extra cheese if desired.

6. Garnish and Serve:
