Tuna Butter Toast Cups
3 TB butter
1/4 c. onions, chopped
3 TB flour
1 tsp salt
1/4 tsp nutmeg
1/4 tsp pepper
2 c. milk
1/4 c. grated sharp cheese (Can substitute Velveeta)
1 c. drained peas (I use frozen)
1 7oz. can flaked tuna, drained (I use white Albacore tuna packed in water)
Melt Butter, simmer onions til tender. Add flour then add milk gradually. Stir in seasonings & cheese. Cook til mixture becomes thickened. Add peas, then at the last add tuna just to heat thru.
Take lightly buttered bread, remove crusts, press into muffin tins, put in the oven to toast or brown lightly, then spoon some tuna mixture in the cups to serve.
OR just serve on buttered toast.
Can sprinkle Paprika on top for color
- It's good on rice, pasta & biscuits also.
- Add tuna last just to lightly heat tuna, I use the white albacore packed in water, which I like much better than the other tuna.
- Mom used canned peas, which I don't like they are mushy. I use frozen peas, much better.
