Keto Peanut Butter Fudge
Ingredients
1 cup natural peanut butter (no sugar added, creamy)
½ cup unsalted butter (or coconut oil for dairy-free)
½ cup powdered erythritol or allulose
1 tsp vanilla extract
Pinch of salt
Optional Keto “Candy” Topping:
Sugar-free chocolate chips (Lily’s or ChocZero)
Sugar-free peanut butter chips
Chopped nuts (pecans, peanuts, or almonds)
Instructions
Melt the Base
In a saucepan over medium heat, melt butter and peanut butter together until smooth.
Sweeten & Flavor
Stir in sweetener, vanilla, and a pinch of salt. Mix well until sweetener dissolves.
Pour & Set
Line a small square baking dish with parchment paper.
Pour mixture in and smooth the top.
Sprinkle with sugar-free chocolate chips or nuts if desired.
Chill
Refrigerate for at least 2 hours or freeze 30–40 minutes until firm.
Cut & Serve
Slice into small squares and enjoy!
💡 Tips & Variations
For chocolate peanut butter fudge, add 2 tbsp unsweetened cocoa powder.
For a crunchy version, stir in chopped nuts before chilling.
Store in the fridge up to 2 weeks or freezer up to 3 months.
