Honey Garlic Glazed Salmon Bowl with Broccoli & Noodles

Ingredients:

1 pound salmon fillet, skin on or off
1 head broccoli, cut into florets
8 ounces dried noodles (udon, soba, or linguine work well)
2 tablespoons honey
2 tablespoons soy sauce (low sodium preferred)
1 tablespoon rice vinegar
1 tablespoon sesame oil
2 cloves garlic, minced
1 tablespoon grated ginger
1 teaspoon cornstarch
1/2 teaspoon red pepper flakes (optional)
Salt and black pepper to taste
2 tablespoons chopped green onions, for garnish (optional)
Sesame seeds, for garnish (optional)

Instructions:

1. Prepare the noodles according to package directions. Drain and set aside. While the noodles cook, prepare the other components.

2. Steam or blanch the broccoli florets until tender-crisp, about 5-7 minutes. Drain well and set aside.

3. In a small bowl, whisk together the honey, soy sauce, rice vinegar, sesame oil, minced garlic, grated ginger, cornstarch, and red pepper flakes (if using). Set aside.

4. Season the salmon fillet with salt and pepper.

5. Heat a large skillet or pan over medium-high heat. Add a teaspoon of oil if needed. Place the salmon fillet in the pan, skin-side down if using skin-on salmon. Cook for 3-4 minutes until the skin is crispy and golden brown (if applicable). Flip the salmon and cook for another 3-4 minutes, or until cooked through. The internal temperature should reach 145°F (63°C).

6. Pour the honey-garlic glaze over the salmon in the pan. Cook for 1-2 minutes, basting the salmon with the glaze, until it thickens and coats the salmon.

7. To serve, divide the cooked noodles and broccoli evenly among bowls. Top with the honey-garlic glazed salmon.

8. Garnish with chopped green onions and sesame seeds, if desired. Serve immediately and enjoy!
