Chicken Tzatziki Bowls
Chicken Tzatziki Bowls are a refreshing and nutritious Mediterranean-inspired meal. The juicy, marinated chicken, infused with garlic, oregano, and lemon, is grilled to perfection and paired with a creamy tzatziki sauce made from Greek yogurt, cucumber, dill, and garlic. This versatile dish can be served over rice, quinoa, or greens, and is topped with fresh vegetables and feta cheese, offering a delicious balance of flavors and textures. 1 lb boneless, skinless chicken breast or thighs
2 tbsp olive oil
2 tbsp lemon juice
1 tsp dried oregano
2 garlic cloves, minced
1/2 tsp smoked paprika (optional)
Salt and pepper to taste
1 cup plain Greek yogurt
1/2 cucumber, grated and squeezed to remove excess water
1 tbsp olive oil
1 tbsp lemon juice
1 garlic clove, minced
1 tbsp fresh dill, chopped
Salt and pepper to taste
2 cups cooked rice, quinoa, or cauliflower rice
1 cup cherry tomatoes, halved
1 cup cucumber, diced
1/2 red onion, thinly sliced
1/4 cup Kalamata olives (optional)
1/4 cup crumbled feta cheese
Fresh parsley or dill, for garnish
Directions:
1. In a bowl, combine olive oil, lemon juice, oregano, garlic, smoked paprika, salt, and pepper. Add the chicken, coat well, and refrigerate for 15 minutes to 24 hours.
2. Cook the chicken on medium heat in a skillet for 6-7 minutes per side or grill for 5-6 minutes per side. Let the chicken rest for 5 minutes, then slice.
3. For the tzatziki, mix yogurt, grated cucumber, olive oil, lemon juice, garlic, dill, salt, and pepper. Adjust seasoning as needed.
4. Assemble the bowls with rice, topped with chicken, veggies, olives, and feta. Drizzle with tzatziki sauce and garnish with parsley or dill.
