Quick and Easy Fried Rice
Ingredients:
2 cups cold cooked rice
1 cup mixed vegetables (carrots, peas, corn)
2 eggs, beaten
2 tbsp soy sauce
1 tbsp sesame oil
2 green onions, chopped
1 clove garlic, minced
Directions:
Heat sesame oil in a large skillet over medium heat. Add garlic and sauté for 1 minute.
Add mixed vegetables and cook for 3-4 minutes until tender.
Push veggies to the side, add beaten eggs, and scramble until cooked through.
Add cold rice and soy sauce. Stir everything together and cook for another 5 minutes.
Garnish with chopped green onions and serve!
