Ingredients

1 lb chicken breast, cut into strips
2 tbsp olive oil
Juice of 1 lemon 🍋

1 tsp dried oregano 🌿
1 tsp smoked paprika 🌶️
Salt and pepper, to taste
Wooden skewers, soaked in water

For the Tzatziki Sauce 🥒

1 cup Greek yogurt
1/2 cucumber, grated and squeezed to remove water 🥒
1 garlic clove, minced 🧄
1 tbsp fresh dill, chopped 🌿
Juice of 1/2 lemon 🍋
Salt and pepper, to taste

For the Bowl 🥗

2 cups cooked bulgur wheat or quinoa 🍚
1 cup cherry tomatoes, halved 🍅
1 cup cucumber slices 🥒
1 cup steamed broccoli florets 🥦
1/2 avocado, diced 🥑
1/4 cup crumbled feta cheese 🧀
For the Wraps (Optional) 🌯
4 spinach or whole wheat pita wraps

Directions

Prepare the Chicken Skewers: In a bowl, mix olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper. Add chicken strips, toss to coat, and marinate for 15 minutes. Thread chicken onto skewers and grill over medium-high heat for 4-5 minutes per side until fully cooked.
Make the Tzatziki Sauce: In a small bowl, combine Greek yogurt, grated cucumber, garlic, dill, lemon juice, salt, and pepper. Mix well and chill in the fridge until ready to serve.
Assemble the Bowl: Divide cooked bulgur wheat or quinoa among four bowls. Arrange cherry tomatoes, cucumber slices, broccoli, avocado, and grilled chicken skewers over the base. Sprinkle with feta cheese.
Serve: Add a dollop of tzatziki sauce on the side. Serve with spinach or whole wheat pita wraps if desired.

Notes:

Swap bulgur for rice or cauliflower rice for a low-carb version.
