Ingredients:
For the Chicken:
2 chicken breasts π
1 tbsp olive oil π«
1 tsp paprika πΆ
Β½ tsp garlic powder π§
Β½ tsp salt & black pepper π§
For the Rice:
1 cup jasmine or basmati rice π
2 cups water
Β½ tsp salt
For the Salad:
1 cup cherry tomatoes, halved π
Β½ cucumber, sliced π₯
1 cup lettuce, chopped π₯¬
1 tbsp olive oil π«
1 tsp lemon juice π
Salt & pepper to taste
Instructions:
Cook the Rice: Rinse the rice under cold water, then cook with water and salt over low heat for 15 minutes. Fluff with a fork.
Grill the Chicken: Season chicken with olive oil, paprika, garlic powder, salt, and pepper. Grill for 5-7 minutes per side until golden brown and cooked through. Let rest before slicing.
Prepare the Salad: Mix tomatoes, cucumber, and lettuce in a bowl. Drizzle with olive oil, lemon juice, salt, and pepper.
