🦐 Surf & Turf Skewers with Chimichurri
Ingredients:
For the skewers:
1 lb beef steak (sirloin or ribeye), cut into 1-inch cubes
1 lb large shrimp, peeled and deveined
2 tbsp olive oil
1 tsp garlic powder
1/2 tsp smoked paprika
Salt & black pepper to taste
Metal or soaked wooden skewers
For the chimichurri sauce:
1 cup fresh parsley, finely chopped
1/4 cup fresh cilantro (optional), finely chopped
3 garlic cloves, minced
1/2 tsp red pepper flakes
2 tbsp red wine vinegar (removed — substitute with 1 tbsp lemon juice + 1 tbsp apple cider vinegar)
1/2 cup olive oil
Salt & black pepper to taste
---
Instructions:
1️⃣ In a bowl, toss beef cubes and shrimp with olive oil, garlic powder, paprika, salt, and pepper. Let marinate for 15–30 minutes. 🧄🧂
2️⃣ While marinating, prepare the chimichurri sauce. Mix parsley, cilantro, minced garlic, red pepper flakes, lemon juice, apple cider vinegar, and olive oil in a bowl. Season with salt & pepper to taste. Let it sit so flavors meld. 🌿🍋
3️⃣ Thread the skewers, alternating beef and shrimp pieces. Leave a little space between for even cooking. 🍢
4️⃣ Preheat a grill or grill pan over medium-high heat. Lightly oil the grates. 🔥
5️⃣ Grill the skewers for about 2–3 minutes per side, or until the shrimp are pink and beef is cooked to your desired doneness. ⏱️
6️⃣ Remove from grill and let rest for a couple minutes. 🔥
7️⃣ Spoon chimichurri generously over the skewers before serving. Serve with rice, grilled veggies, or fresh salad! 🥗
