Ingredients:
For the grilled chicken 🍗
Chicken breast (sliced or whole)
Olive oil
Lemon juice
Garlic (minced)
Smoked paprika
Cumin
Salt & pepper
For the herb rice 🍚
Basmati or long-grain rice
Chopped parsley
Olive oil or butter
Pinch of turmeric or saffron (optional)
Salt
For the yogurt sauce 🥣
Greek yogurt
Chopped fresh herbs (parsley or cilantro)
Garlic (minced)
Lemon juice
Salt & pepper
Instructions:
Marinate chicken in oil, garlic, lemon juice, paprika, cumin, salt, and pepper. Grill until golden and cooked through. Cook rice, then toss with herbs and optional turmeric. Mix yogurt sauce ingredients in a bowl. Assemble rice in a bowl, top with chicken, a big spoonful of yogurt sauce, and lemon wedges.
Tips:
Add cucumber to the yogurt for a tzatziki twist. Serve with pita or grilled veggies on the side.
