No Bake Chocolate Peanut Butter Cookies
Ingredients:
- ½ cup butter, salted real butter, do not substitute
- ½ cup milk (skim, 1%, 2% or whole)
- 2 cups granulated sugar
- ½ cup unsweetened cocoa (I use Hershey’s Natural Unsweetened Cocoa)
- 1 teaspoon pure vanilla extract
- ½ cup creamy peanut butter
- 3 cups Quick Oats (quick-cooking oatmeal) or Old-Fashioned Oats
Directions:
1. In a medium saucepan, combine butter, milk, granulated sugar, and unsweetened cocoa. Bring to a rolling boil over medium heat, stirring frequently.
2. Allow the mixture to boil for 1 minute, then remove from heat.
3. Stir in the vanilla extract and peanut butter until smooth and fully combined.
4. Add the oats to the mixture and stir until all oats are well coated.
5. Using a spoon, drop spoonfuls of the mixture onto wax paper or parchment paper to form cookies.
6. Let cookies sit at room temperature until they are set and firm, about 30 minutes.
