🛒 Ingredients:
🍗 2 boneless, skinless chicken breasts
🫒 2 tbsp olive oil
🍋 Juice of 1 lemon + wedges for serving
🧄 2 garlic cloves, minced
🌿 1 tsp dried oregano (or fresh, chopped)
🧂 Salt & pepper to taste
🍚 2 cups cooked rice (white, brown, or basmati)
🍅 1 cup cherry tomatoes, halved
🥒 1 cup cucumber slices
🧅 ½ red onion, thinly sliced
🫒 ½ cup Kalamata olives
🧀 1 cup crumbled feta cheese
🌿 Fresh parsley, chopped for garnish
👨🍳 Instructions:
Marinate Chicken: In a bowl, mix olive oil, lemon juice, garlic, oregano, salt, and pepper. Coat chicken and marinate for at least 15 minutes (up to 2 hours for more flavor).
Cook Chicken: Heat a skillet or grill pan over medium-high. Cook chicken 5–6 minutes per side until golden and fully cooked (internal temp 165°F / 74°C). Rest 2 minutes, then slice.
Prepare Bowl Base: Divide cooked rice among 4 serving bowls.
Assemble: Top each bowl with chicken slices, cherry tomatoes, cucumber, red onion, olives, and feta.
Garnish: Sprinkle parsley and serve with lemon wedges on the side for squeezing.
