๐ Fish:
1 lb (450g) firm white fish fillets (e.g., cod, halibut, or tilapia), cut into chunks ๐

2 tbsp coconut oil ๐ฅฅ
1 medium onion, finely chopped ๐ง

2 tbsp red curry paste ๐ถ๏ธ
1 can (13.5 oz / 400ml) coconut milk ๐ฅฅ
1 cup vegetable broth or chicken broth ๐ฒ
1 tbsp fish sauce (or soy sauce for a vegetarian option)
1 tsp brown sugar or palm sugar
Juice of ยฝ lime ๐
1 tbsp soy sauce or tamari

1. ๐ Marinate the Fish:
Rinse the fish fillets and pat dry.
Season with lime juice, salt, and pepper. Set aside while you prepare the curry base.

Heat 2 tbsp coconut oil in a large skillet or saucepan over medium heat.
Add the chopped onion and sautรฉ for 4โ5 minutes until soft and translucent.
Add garlic, ginger, and optional green chilies. Sautรฉ for 1โ2 minutes until fragrant.
3. ๐ถ๏ธ Add the Curry Paste:
Stir in the red curry paste and cook for another 1โ2 minutes, allowing the paste to toast and release its oils.
4. ๐ฅฅ Simmer the Coconut Base:
Pour in the coconut milk and vegetable broth, stirring well to combine.
Add fish sauce, soy sauce, brown sugar, and lime juice.
Bring the mixture to a gentle simmer and cook for 5โ7 minutes to let the flavors meld.
5. ๐ Cook the Fish:
Gently add the fish chunks to the curry sauce and simmer for 5โ7 minutes, or until the fish is cooked through and flakes easily with a fork.
Be careful not to overcook the fish, as it can become tough.
