For the Garlic Rice 🍚
1 cup jasmine or basmati rice
2 cups water
1 tbsp vegetable oil
2 garlic cloves, minced 🧄
Pinch of salt 🧂
For the Grilled Chicken 🍗
2 boneless, skinless chicken breasts, cut into chunks
1 tbsp olive oil 🫒
1 tsp lemon juice 🍋
1 tsp garlic powder 🧄
1/2 tsp paprika 🌶️
Salt & pepper to taste 🧂
For the Sautéed Veggies 🥦🥕
1 small zucchini, sliced into half-moons
1 small carrot, diced
1/2 onion, chopped
1 tbsp olive oil 🫒
Salt, pepper, and chili flakes to taste 🌶️
Instructions 👩🍳
Cook the rice: Rinse the rice until water runs clear. In a pot, heat 1 tbsp oil and sauté garlic until golden. Add rice, stir, then pour in water and salt. Bring to a boil, cover, and simmer on low for 12–15 minutes. Fluff with a fork.
Marinate the chicken: Toss chicken pieces with olive oil, lemon juice, garlic powder, paprika, salt, and pepper. Let sit for at least 10 minutes.
Grill the chicken: Heat a grill pan or skillet over medium-high. Grill chicken for 5–7 minutes, turning occasionally, until cooked through and nicely browned.
Cook the veggies: In a separate pan, heat olive oil. Add onions, then carrots, cooking for 4 minutes. Add zucchini and cook another 4–5 minutes until just tender. Season with salt, pepper, and chili flakes.
Assemble: Serve grilled chicken with a mound of garlic rice and sautéed vegetables on the side.
Notes & Tips 💡
Swap zucchini with bell peppers or broccoli depending on season.
For extra protein, add a fried egg on top.
