Peanut Butter Chocolate Chip Bites
Ingredients:
- 1 cup unsalted butter, softened
- 3/4 cup brown sugar
- 1/2 cup granulated sugar
- 1 large egg (optional)
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/2 cup creamy peanut butter
- 1/4 cup powdered sugar
- 1 1/2 cups semi-sweet chocolate chips
- 1 egg yolk mixed with 1 tablespoon water for brushing
Directions:
1. Preheat oven to 350°F (175°C).
2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
3. Beat in the egg (if using) and vanilla extract until well combined.
4. Gradually add the all-purpose flour, mixing until a dough forms.
5. In a separate bowl, combine the creamy peanut butter and powdered sugar until smooth.
6. Roll out half of the dough on a lightly floured surface to about 1/4 inch thickness.
7. Spread the peanut butter mixture evenly over the rolled dough.
8. Sprinkle the semi-sweet chocolate chips over the peanut butter layer.
9. Roll out the remaining dough to the same thickness and place it over the peanut butter and chocolate chip layer, pressing gently to seal.
10. Cut the layered dough into bite-sized squares or desired shapes.
11. Place the bites on a baking sheet lined with parchment paper.
12. Brush the tops with the egg yolk and water mixture to give a golden finish.
13. Bake for 12-15 minutes or until the edges are lightly golden.
14. Let cool on a wire rack before serving.
