1 medium zucchini, sliced 🥒

200g cherry tomatoes, halved 🍅

1 red onion, thinly sliced 🧅

Salt & pepper to taste

100g feta cheese, crumbled 🧀

Fresh parsley, chopped 🌿

👩‍🍳 Instructions:

Heat olive oil in a large skillet over medium heat, add ground beef, and cook until browned. Add onion and garlic, cook until softened, then toss in zucchini and sauté for 5–6 minutes. Add cherry tomatoes, season with oregano, salt, and pepper, and cook for another 3–4 minutes. Remove from heat, sprinkle with crumbled feta and chopped parsley, and serve warm – perfect on its own or with rice, couscous, or pita.

For a Mediterranean twist, add a splash of lemon juice or a handful of kalamata olives!
