🇮🇹 Risotto alla Zucca (Pumpkin Risotto) 🎃❤️
Creamy, comforting, and naturally sweet – a fall favorite from Italy!
📝 You will need:
• 300 g Arborio rice
• 300 g pumpkin, cubed
• 1 small onion, chopped
• 1 L vegetable broth, warm
• 50 g butter
• 50 g Parmesan cheese
• 2 tbsp olive oil
• Salt and pepper to taste
👩🍳 Instructions:
1️⃣ Sauté onion in olive oil until soft, then add pumpkin and cook until tender.
2️⃣ Stir in the rice and toast for 2 minutes.
3️⃣ Add broth one ladle at a time, stirring constantly until absorbed.
4️⃣ Cook for about 18–20 minutes, until the rice is creamy and al dente.
5️⃣ Stir in butter and Parmesan, season to taste, and serve hot.
