Protein Power Bowl 🥗
Ingredients:
1 cup cooked brown rice
1 boiled egg (halved)
1/2 cup cherry tomatoes (halved)
1/2 avocado (cubed)
1/2 cup grilled chicken breast (cubed)
1/4 cup feta cheese
A handful of arugula or mixed greens
1/4 cup olives (mixed)
2 tbsp red onion (chopped)
Salt, pepper, lemon juice, and olive oil to taste
Instructions:
Start with a base of greens in a large bowl.
Arrange rice, chicken, avocado, tomatoes, olives, egg, onion, and feta on top.
Drizzle with olive oil, lemon juice, salt, and pepper.
