Mongolian Beef Stir-Fry with Bell Peppers & Onions
This Mongolian Beef Stir-Fry is a quick and flavorful dish that combines tender beef with vibrant bell peppers and onions in a savory, slightly sweet sauce. It's perfect for a weeknight dinner or a special occasion.
Ingredients:
1 lb (450 g) flank steak or sirloin, sliced into thin strips
1/2 cup soy sauce
1/4 cup brown sugar
2 tbsp vegetable oil
2 tbsp cornstarch
1 tbsp minced garlic
1 tbsp minced ginger
1/2 tsp red pepper flakes (optional, for heat)
1 large onion, sliced
2 large bell peppers (any color), sliced
1 cup beef broth
1/4 cup water
1/4 cup chopped green onions (for garnish)
Instructions:
Prepare the Beef:
Slice the beef into thin strips. In a bowl, combine the soy sauce, brown sugar, 1 tablespoon of vegetable oil, minced garlic, minced ginger, and red pepper flakes (if using). Add the beef strips and marinate for at least 15 minutes, or up to 1 hour in the refrigerator for more flavor.
Prepare the Sauce:
In a small bowl, mix together the beef broth, water, and cornstarch. Set aside.
Cook the Beef:
Heat the remaining 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated beef and cook for 3-4 minutes until browned and cooked through. Remove the beef from the skillet and set aside.
Cook the Vegetables:
In the same skillet, add the sliced onions and bell peppers. Cook for 5-7 minutes until they are tender but still crisp.
Combine and Sauce:
Return the cooked beef to the skillet with the vegetables. Pour the prepared sauce over the beef and vegetables. Stir well to combine and cook for another 2-3 minutes until the sauce thickens and coats the beef and vegetables evenly.
Serve:
Serve the Mongolian Beef Stir-Fry hot over steamed rice or noodles. Garnish with chopped green onions for added flavor and color.
Tips:
Thinly Sliced Beef: Ensure the beef is sliced very thin to cook quickly and evenly.
High Heat: Stir-frying at high heat ensures the vegetables remain crisp and the beef stays tender.
Customize Vegetables: Feel free to add other vegetables like broccoli, carrots, or mushrooms.
Adjust Spices: If you prefer a spicier dish, increase the amount of red pepper flakes or add a splash of hot sauce.
