🛒 Ingredients:
For the Meatballs:
500g ground beef or lamb 🥩
1 egg 🥚
2 tbsp breadcrumbs
2 garlic cloves, minced 🧄
1 tsp oregano
Salt & pepper to taste
Olive oil for frying
For the Tzatziki Sauce:
200g Greek yogurt 🥛
1/2 cucumber, grated and drained 🥒
1 garlic clove, minced
1 tbsp lemon juice 🍋
1 tbsp fresh dill, chopped 🌿
Salt & pepper to taste
For the Bowl:
2 cups cooked rice 🍚
1 cucumber, sliced
1/2 red onion, thinly sliced 🧅
Cherry tomatoes, halved 🍅
Fresh dill for garnish
👨🍳 Instructions:
Mix all meatball ingredients in a bowl and shape into small balls.
Heat olive oil in a skillet and fry meatballs until browned and cooked through, about 12-15 minutes.
For tzatziki, mix all sauce ingredients in a bowl and chill for 10 minutes.
Assemble your bowls: start with a bed of rice, arrange the meatballs, cucumbers, onions, and tomatoes around the edge, and place a big scoop of tzatziki in the center.
Garnish with fresh dill and a sprinkle of paprika if desired. Serve and enjoy!
