Marinate and cook the chicken:
Combine chicken with olive oil, lemon juice, garlic powder, paprika, cumin, oregano, salt, and pepper. Let marinate for 10–15 minutes. Sauté in a skillet over medium-high heat until golden and cooked through.
Make the garlic sauce:
Whisk yogurt (or mayo), garlic, lemon juice, olive oil, and seasoning until creamy.
Assemble the bowl:
Add cooked rice to a bowl. Top with the spiced chicken slices, diced tomato, cucumber, and red onion.
