🛒 Ingredients:
For the Chicken:
Chicken breasts, boneless 🍗
Olive oil or sesame oil 🫒
Garlic powder, salt & pepper 🧂
For the Red Curry Sauce:
Thai red curry paste 🌶️
Coconut milk 🥥
Fish sauce or soy sauce
Brown sugar
Garlic & ginger, minced 🧄
Lime juice 🍋
Fresh cilantro 🌿
For the Bowl:
Steamed jasmine rice 🍚
Broccoli florets, steamed or sautéed 🥦
Black sesame seeds (optional) ⚫
👩🍳 Instructions:
Grill seasoned chicken until charred and fully cooked. In a saucepan, sauté garlic and ginger, add curry paste, then pour in coconut milk. Stir in sugar, lime juice, and fish or soy sauce, and simmer to thicken slightly. Steam rice and broccoli. Assemble the bowl with rice, sliced grilled chicken, broccoli, and spoon the curry sauce generously over the top. Sprinkle with sesame seeds and chopped cilantro to serve.

Add bell peppers or zucchini to the curry.
Use tofu or shrimp instead of chicken.
