Black Pepper Chicken
Ingredients:
1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
2 tbsp soy sauce
1 tbsp cornstarch
2 tbsp vegetable oil
1 bell pepper, sliced
1 onion, sliced
3 cloves garlic, minced
1-inch piece of ginger, minced
1 tsp freshly ground black pepper
1/2 tsp salt
2 green onions, chopped (for garnish)
Optional: Cooked rice (for serving)
Directions:
Marinate the Chicken:
In a bowl, combine the chicken pieces with soy sauce and cornstarch. Mix well to coat.
Let the chicken marinate for about 15 minutes.
Cook the Chicken:
Heat the vegetable oil in a large skillet or wok over medium-high heat.
Add the marinated chicken and cook until browned and cooked through, about 5-7 minutes.
Remove the chicken from the skillet and set it aside.
Sauté the Vegetables:
In the same skillet, add the bell pepper, onion, garlic, and ginger.
Sauté for about 3-4 minutes, until the vegetables are tender.
Combine and Season:
Return the cooked chicken to the skillet with the vegetables.
Sprinkle with black pepper and salt, stirring to combine.
Cook for an additional 2 minutes to heat everything through.
Serve:
Garnish with chopped green onions.
Serve hot, ideally over cooked rice.
