Ingredients:
For the Cookie Base:
1 cup unsalted butter, melted
1 cup packed brown sugar
½ cup granulated sugar
2 large eggs
1 tsp vanilla extract
1¾ cups all-purpose flour
1 tsp baking soda
½ tsp salt
For the Crunch:
3 cups Rice Krispies cereal (crushed slightly for texture)
For the Chocolate:
1 cup semisweet chocolate chips
½ cup milk chocolate chips (optional, for extra indulgence)
Instructions:
Prep the Dough:
In a large mixing bowl, combine the melted butter, brown sugar, and granulated sugar. Beat until smooth and creamy. Add the eggs one at a time, ensuring each is fully incorporated before adding the next. Stir in the vanilla extract.
Mix Dry Ingredients:
In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, mixing just until combined.
Add the Crunch & Chocolate:
Fold in the crushed Rice Krispies cereal and both types of chocolate chips (semisweet and milk). Mix gently to ensure the cereal and chocolate are evenly distributed throughout the dough.
Form the Cookies:
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper. Use a tablespoon or small scoop to portion out the dough into rounded balls, placing them about 2 inches apart on the prepared sheet.
