Ingredients:
For the Slaw:
2 cups (200g) shredded red cabbage
2 cups (200g) shredded green cabbage or Napa cabbage
1 large carrot, julienned or grated
1 red bell pepper, thinly sliced
1 yellow or orange bell pepper, thinly sliced
1/2 cup (75g) edamame, shelled and cooked
1/4 cup (30g) green onions, thinly sliced
Optional: 2 tablespoons toasted sesame seeds for garnish
Optional: 1/4 cup (15g) chopped cilantro
For the Sesame Ginger Vinaigrette:
1/4 cup (60ml) rice vinegar
2 tablespoons low-sodium soy sauce (or tamari for gluten-free)
1 tablespoon toasted sesame oil
1 tablespoon maple syrup or agave nectar
1 inch (2.5 cm) piece of fresh ginger, grated
1 small clove garlic, minced
Pinch of red pepper flakes (optional)
Directions:
1. Prepare the Sesame Ginger Vinaigrette: In a small bowl or jar, whisk together the rice vinegar, soy sauce (or tamari), toasted sesame oil, maple syrup (or agave), grated fresh ginger, minced garlic, and red pepper flakes (if using). Set aside.
2. Combine Slaw Vegetables: In a large salad bowl, combine the shredded red cabbage, shredded green/Napa cabbage, julienned carrot, sliced red bell pepper, sliced yellow/orange bell pepper, cooked edamame, and thinly sliced green onions. If using, add the chopped cilantro.
3. Dress the Slaw: Pour the prepared sesame ginger vinaigrette over the slaw vegetables.
4. Toss to Combine: Toss the slaw thoroughly until all the vegetables are evenly coated with the dressing.
5. Chill and Serve (Recommended): For the best flavor, cover the slaw and refrigerate for at least 20-30 minutes before serving. This allows the flavors to meld and the cabbage to soften slightly.
6. Garnish and Enjoy: Just before serving, toss the slaw again. Garnish with toasted sesame seeds, if desired. Serve chilled or at room temperature.
